Colorado is such a magnificent place. It holds a special place in my heart. Kaleb and I had come before about 3 years ago for business. I loved it then and still do. So when the opportunity arose again for him to come back out for work purposes, I was eager to tag along. I love to explore new places and soak up all it has to offer. It is one of my favorite things on earth. That is why we are out this way, but that's not all to the story.
The beginning of this trip got off to a ROCKY (pun intended) start with freezing temperatures, snow, a leaky tire on our rental car etc. But as all things in life, there was redemption. We will be "tripping" for a total of 11 days, 5 of which will be here in the springs. I will be sharing our first few days in Colorado with you. We will be in Colorado for the most amount of time so I am breaking it into two parts. It is lovely here. I am happy to share it with you.
We arrived in Denver around 10am Sunday morning to a brisk 38 degrees -insert eye roll- , and the very first stop for me was a no brainier.... Torchy's Tacos! I fell in love with this place in Dallas while visiting my dear friends, and it was love at first bite. Everywhere I travel, I look to see if there is a Torchy's. They really only have them in CO, AZ, and TX. Anyway, if you ever get the chance... TRY IT! My recommendations are the queso, the street corn, the Trailer park taco, and the Baja Shrimp. But everything is amazing.
We left Torchy's and went on to explore a bit of downtown Denver. It was pretty uneventful. We mainly walked around mindlessly for 30 minutes only to decide to head on our merry way to Colorado Springs. But not before trying some local highly rated coffee shop. It was trendy. It was cute. I did not like my order. We both ordered a Nitro cold brew with almond milk. I was not impressed, but maybe I just ordered wrong. I don't remember the name anyway and just spent the last 5 minutes trying to find it so... yeah. It was a cute place to visit and get a picture.
We made it on to Colorado Springs. We checked into our hotel and did what everyone does when they are in Colorado Springs. We went for a quick visit to the Garden of the Gods. I mean... It's magnificent. I can not get enough, and Lord knows I couldn't get enough pictures of the place. I realized so super quickly on this trip that I did not pack appropriately. I have been in leggings, a sweatshirt, tennis shoes, and a borrowed -from- my -sister Patagonia jacket, talk about coming in clutch. She's the hero of this trip. I'm so super side tracked in this blog.
Garden of the Gods... right right. It's spectacular, and you really can't spend enough time here. Last time, Kaleb and I were here, we just drove through.... so lame, I know. We didn't spend too much time here Sunday as we were cold and tired. We just had a quick stroll and then on to dinner in downtown at some fancy hip place again brought to me by Yelp reviews. I believe it was named 503w . It was so cute and the food was so unique. Right up my alley... Kaleb? Not so much. We ordered Korean boa bun tacos, shrimp and goat cheese cakes, street wings, calamari, and some very interesting pork belly slider entree. Kaleb did not like it and ordered a burger with a pile of ketchup. I know you're surprised.
I can see I am going to have to do some condensing for the sake of time, as I am still on Sunday. It shouldn't be too hard as Monday and Tuesday were pretty uneventful. We woke up and ate breakfast, and set out to the Garden of the Gods Trading Post, Manitou Springs for a quick visit and then to dinner with Kaleb's work crew. It was there it started to snow... SNOW people. I was wearing sandals....because the only dinner worthy shoes I had packed were open toe. We drove slowly back to the hotel and talked ad nauseam about how we couldn't believe the sick twisted humor of mother nature.
...which leaves us with Tuesday. We woke up to this, and Kaleb did not have to go in which was nice. So he worked from the hotel and I worked some and read some. I am reading " The Road Back To You" I recently became fascinated by the Enneagram. I have been reading all bout the 9 personality types and am blown away by the accuracy and insight. It truly is a journey to self discovery as the book claims. I love this book. It has helped me to see how I relate to others and God and has helped me see how to relate to the other numbers in my life. I give it a 10 out of 10.
After a slow moving day of reading and staring out the window of the beautiful view from our hotel room as the snow melted, we went back to the Garden of the God's for a quick hike before a Korean bbq dinner.
Our hike was so beautiful and so so so cold and our dinner was amazing. It ended up being a great Tuesday even though it started out a little dreary. Of all the places Yelp has lead me thus far, I think Tong Tong (the Korean bbq restaurant) has been the best. If you are in the area, try it out.
Our time so far in Colorado has been not what I expected, but wonderful. I have enjoyed the rest. I have gotten over 8 hours of sleep almost every night for the first time in I can't remember how long. I have eaten great food, and seen the greatness of God in nature. I can't complain. We have 2 more days left here and I plan to live it up before we head on to more amazing things in Utah, Arizona, and New Mexico. I can't wait! I have named this trip business in the front party in the back. Kaleb and I decided to take full advantage of this time and vacation for the rest of it.
